This superb wine is comprised of 80% pinot noir, providing flesh and richness, and 20% chardonnay which, together with the cool vintage, brings bright, lively acidity to the finish. As with all of our sparkling wines, the Méthode Traditionelle was employed. This is the third disgorgement of this wine and has been aged ‘on the lees’ (yeast) for seven years. Pass the oysters!
